50 g Vegetable Oil
1 Stick Butter ( 100g )
1 tsp Ground Cinnamon
1 tsp Ground Nutmeg
3/4 tsp Vanilla Extract
1/2 tsp Baking Soda ( not powder )
60g Brown Sugar
1/4 tsp Salt
( For variations add Raisins or Almonds. With the almonds , you can add either to the mixture or just to the top )
First the “wet” bowl
The butter should be softened first
Using a stand mixer, gently beat the egg , butter and oil until smooth , add and mix with vanilla extract.
In a separate ”dry” bowl, sift together the flour, spices, sugar and baking soda. Then add the salt .
Pour about ½ the liquid into the dry bowl and slowly blend, when its getting really stiff add the other half and continue blending.
Add ( fold in ) the chopped apples into the mixture
Preheat the Airfryer at 180°C , which will take only a couple of minutes.
Pour the mixture into the baking pan and cover the baking pan with foil . Now using a sharp knife make about 20 holes in the foil .
Cook at 160°C and bake for 40 minutes. Then take off the foil and cook for another 5 minutes or until you have a nice brown top
Cool before taking it out of the baking pan as it tends to break up easily.
Serve with vanilla ice cream
