Chicken Korma

Chicken Korma (serves 4)

Probably not an ideal recipe to prepare in an airfryer, but it is one of my favorites and is fairly easy.

Ingredients

  • 3 chicken breasts
  • ½ cup of olive oil
    1 onion
    2 cloves of garlic
    1cm piece of ginger
    ½ cup of Garam Masala
    200ml chicken stock
    100ml coconut milk
    1 heaped of toasted sliced almonds
    Chopped fresh coriander

 

Method

Prepare the dry ingredients:

finely chop the garlic, ginger and onion , mix thoroughly ready to add in the second half.

Cut the chicken breasts up into cubes cover in the oil in a cooking pan

Cook for 10 minutes 200 C , shake the basket frequently

If using the Halo fryer use the inner bowl directly and use on Tilt setting / Dual heat

Add the onion , garam masala and ginger, cook for 10 mins, stir occasionally

Add the stock and coconut milk with the almonds and stir well

Cook for a further 15 mins ( Halo fryer should be level ) stir frequently

When ready serve with a sprinkle of coriander, white rice and Naan bread
